Steamed C40 General Description

Steamed C40 is a specialty malt used to influence flavor and color. It is produced with a special steam-crystalized kilning process, rather than the stewing and roasting process of a traditional crystal malt.

The resulting malt adds the desired flavor and color, as you would expect from a crystal malt. Steamed C40, however, comes across as less assertive than most traditional crystal malts due to our special steam-injection and kiln-finishing process.

Flavor and Aroma Contributions

The flavor Steamed C40 presents is bold, but is presented in a softer manner than most drum-roasted crystal malts.

This makes it a fantastic option for adding less aggressive flavors to lighter beers. At the same time, because there is no risk of astringent off flavors, Steamed C40 can be used more assertively to impart complex, malt-forward flavors to darker beers.

Color and Appearance Considerations

Steamed C40 malt measures between 26 and 34 Lovibond. The resulting color added to the beer is between 35 and 45 SRM, resulting in a deep golden-brown hue.

At a lower percentage of the grist, Steamed C40 has a more subtle effect on color and flavor. Perhaps giving what would be a straw-yellow colored IPA a more golden hue.

The immediate effect on the color of a darker beer isn’t as obvious. Instead, Steamed C40 adds a complexity and depth to the color of darker beers that magnifies the sensory impact of the beer.

“I think it adds a great malt complexity without adding too much sweetness. Also, I love munching on some as a snack on the mill deck!” – David Nelson, Braided River Brewing

Primary Usage for Steamed C40

As a specialty malt, Steamed C40 is primarily used to influence the color and flavor of a beer. Beer style largely dictates the usage of this colorful, flavorful malt.

In a beer such as a Pale Ale or IPA, a small amount of Steamed C40 can add a touch of color and a subtle sweetness to the flavor without clashing with the hops that are meant to shine.

Darker beers, such as ambers, reds, and browns, benefit from more depth of color and rich, malty complexity without imparting some of the harsher flavors of darker drum-roasted malts.

What brewers are saying about MMC Steamed C40

We created Steamed C40 to help brewer’s add toffee and caramel notes to their recipes and to impart rich, golden-brown hues to the beer’s color. All of this is achieved without the assertive flavor of a more traditional drum-roasted crystal malt.

Brewers have been incredibly receptive to Steamed C40, using it deftly in many different beer styles.

“We usually use Steamed C40 for some color and sweetness where an English crystal might be too forward,” said Will Rutemeyer, co-founder and head brewer at Balter Beerworks in Knoxville, Tennessee.

“We can use Steamed C40 to get more color and flavor without clashing when using typical piney, citrus American hops. It also mills nicely, (and is) not as likely to shatter in our simple two-roller mill.”

David Nelson, another longtime Malteurop customer and founder of Braided River Brewing in Mobile, Alabama also really likes Steamed C40.

“We love to use it in any of our British-style beers and in any American Amber or Red we do. The subtle toffee and caramel flavors go great in those styles,” said David, who had recently used Steamed C40 in an Irish Red Ale.

“I think it adds a great malt complexity without adding too much sweetness. Also, I love munching on some as a snack on the mill deck!”
