As North American brewers, this probably isn\u2019t the first thing you think about when it comes time to decide on a recipe for your next batch of beer. So what is the first thing you think about?<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">Is it the ease of access to the ingredients? The style? Something new and innovative or a flagship that everyone loves and expects? Or is it the German purity law?<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">Regardless of the first thing that comes to mind, you know that you need to start with high quality malts, hops, yeast, and water. Even if you include adjuncts, or take away one of the four, these ingredients are probably at the forefront of your decision-making factors.<\/span><\/p>\n<p>&nbsp;<\/p>\n<figure class=\"image\"><img decoding=\"async\" src=\"https:\/\/www.malteuropmaltingco.com\/wp-content\/uploads\/2025\/07\/aeb3dbf1-8398-991d-88ab-f581f318c020-water grain and hop pellets.jpg\"><\/figure>\n<p>&nbsp;<\/p>\n<h3><span style=\"background-color:transparent;color:#000000;\">What is Reinheitsgebot?<\/span><\/h3>\n<p><span style=\"background-color:transparent;color:#000000;\">Rewind a few hundred years and transport yourself to Bavaria in the 16th century. Your decision-making process might just become a lot simpler.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">The German Reinheitsgebot, or purity law (translated to mean purity order), came into effect in 1516. Why? Long story short, the Duke of Bavaria, Wilhelm IV,&nbsp; felt it necessary to dictate what brewers could use to brew beer: barley, hops, and water.&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">Wheat could not be used because it needed to be used for food instead. Adjuncts most definitely should not be used because these could create toxins and become hallucinogenic. Or so was said. Yeast, at that time, wasn&#8217;t even heard of.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">Or was it.&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><span style=\"background-color:transparent;color:#000000;\">Why was yeast not one of the approved ingredients in the original German purity law?<\/span><\/h3>\n<p><span style=\"background-color:transparent;color:#000000;\">Since yeast wasn\u2019t included in the allowed ingredients, many assume it wasn\u2019t known yet. Speculations from an article written in <i>All About Beer<\/i>, now posted in <\/span><a href=\"https:\/\/www.beervanablog.com\/beervana\/2021\/4\/6\/the-complex-half-millenium-story-of-reinheitsgebot\"><span style=\"background-color:transparent;color:#1155cc;\"><i><u>Beervana<\/u><\/i><\/span><\/a><span style=\"background-color:transparent;color:#000000;\">, included a statement&nbsp; from a 6th generation brewer from Schlenkerla in Germany, Matthias Trum.&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">Trum commented on how brewers in the 16th century couldn\u2019t have not known about yeast. The term, maybe, wasn\u2019t heard of yet, but the stuff was. And it was precisely that stuff &#8211; zeug, in German &#8211; that was consistently found at the bottom of the fermenters.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">It\u2019s easy to see how the Duke of Bavaria saw that \u201cstuff\u201d as simply being a part of the beer, not an additional ingredient. That stuff later became known as yeast. It also later became one of the four ingredients allowed when brewing using the German purity law called Reinheitsgebot.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">So, if you were a brewer then and wanted to be able to sell your beer while still maintaining your freedom, you better follow suit and only brew with barley, water, and hops.<\/span><\/p>\n<p>&nbsp;<\/p>\n<figure class=\"image\"><img decoding=\"async\" src=\"https:\/\/www.malteuropmaltingco.com\/wp-content\/uploads\/2025\/07\/a5fe8afa-5877-5c21-f367-d5830b19bbff-lady in blue tasting beer.jpg\"><\/figure>\n<p>&nbsp;<\/p>\n<h3><span style=\"background-color:transparent;color:#000000;\">Reinheitsgebot &#8211; not just in Germany anymore<\/span><\/h3>\n<p><span style=\"background-color:transparent;color:#000000;\">Though harsh penalties from not following the purity law are no longer in effect, some 500 or so years later, Reinheitsgebot has been expanded upon a bit, and is still in effect. In Germany, that is.&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">And today, all across the globe outside of Germany, many brewers strive to follow this strict regimen of crafting beers, even though there is nothing dictating that they do so. Why? Beer and breweries that follow Reinheitsgebot seemingly carry an elevated status equal to high quality, well-crafted beer. Many consumers think so, too.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">While most German brewers still support the purity law today, there are more and more brewers fighting the status of it, citing limited creativity and innovation in their recipes.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">A German brewer by the name of Johannes Heidenpeter told <\/span><a href=\"https:\/\/www.npr.org\/sections\/thesalt\/2013\/12\/17\/251959392\/is-a-500-year-old-german-beer-law-heritage-worth-honoring\"><span style=\"background-color:transparent;color:#1155cc;\"><u>NPR<\/u><\/span><\/a><span style=\"background-color:transparent;color:#000000;\"> that the purity law is restrictive and makes it difficult to be creative with his recipes. He says, &#8220;Why shouldn&#8217;t I include coriander or berries if they improve the taste? Plenty of countries with brewing traditions as old as Germany&#8217;s produce high-quality beer without the purity law.\u201d<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"background-color:transparent;color:#000000;\">But other brewers argue that you can be creative within Reinheitsgebot by using a variety of hops and malts to create the flavors you need and want when brewing. And many brewers and consumers also argue that adhering to the purity law will keep German beer pure and true to its roots.&nbsp;&nbsp;<\/span><\/p>\n<p>&nbsp;<\/p>\n<figure class=\"image\"><img decoding=\"async\" src=\"https:\/\/www.malteuropmaltingco.com\/wp-content\/uploads\/2025\/07\/795d20bd-a424-fbe6-6f66-c268705da6d9-oktoberfest beer in mugs.jpg\"><\/figure>\n<p>&nbsp;<\/p>\n<h3><span style=\"background-color:transparent;color:#000000;\">High quality malts at MMC are a clear winner.<\/span><\/h3>\n<p><span style=\"background-color:transparent;color:#000000;\">But not everything is clear when it comes to Reinheitsgebot, as evidenced by the \u201cstuff.\u201d For example, adding CO2 (carbon dioxide) that is not captured in the brewing process is not following Germany\u2019s purity law.
